Beat the Wheat - The Easiest Cake Recipe You'll Ever See!

Akin to most people, the current lockdown has turned me into a lite version of a sou pastry chef as I was compelled to cook things that I craved for when my favourite eateries were closed and most of my trips to the kitchen lead to a dessert as the end result. Now, as much as I like devouring a rich chocolate cake, there are just some days that I crave something lighter like a vanilla sponge. So, one day at 11 pm at night, like any sane person, I went around frolicking on the web to find that perfect recipe for a vanilla cake. All the usual tried and tested recipes had iterations of condensed milk and all-purpose flour (Maida). Next day, I got the required ingredients and rushed to make the sponge cake. This routine shamelessly lasted for the next two months.

While I do not fully grasp the concept of vegan, gluten-free, fat-free = taste free desserts, I knew that I felt a little guilty each time I consumed copious amounts of Maida in the cake and the tussle of getting condensed milk each time was another let down no matter even if I had zilch issues with the delicious taste. But, turning a 'dessert' healthy without compromising on its flavour is a tedious task in itself.


So, lo and behold after a few trials by my aunt, the wheat cake recipe was born. This cake is quick and easy to make with ingredients that are generally available in all households and tastes like a small slice of heaven. So, now even if you want some midnight snacking (like me) you will not have to worry. I kid you not, there came a time my entire family was so hooked that we baked this cake each alternate week.

You can easily follow the steps that the recipe entails or if you want an even healthier version you could replace the sugar with jaggery (rest assured, it tastes equally amazing) or if you're feeling a little fancy-schmancy, replace the butter with olive oil. To take things up a notch, you can even jazz it up by adding a few walnuts/almonds, chocolate chips or layer it with a fresh batch of buttercream frosting. In short, the possibilities with this again, are endless!
